It’s Football Season!
For the past ten years, I have participated in a Fantasy Football league with my friends. At the beginning of football season, we all get together for the draft and have a bbq to celebrate!
Because I love food (probably more than the average person), I spend quite a lot of time thinking about what food and beverages I want to serve for our football draft.
This year, I decided I would create peppered ribeye sliders with a homemade red onion jam. Sliders are truly an iconic football appetizer, but tender peppered ribeye steak paired with a sweet and savory red onion jam elevates a dish, while still being approachable.
Plus, they’re pretty easy to make!
Peppered Ribeye Sliders with a Red Onion Jam
The best thing about this recipe is that it’s a one-pan, 30 minute recipe. While I love elevated dishes, I am also a fan of easy, with as few dishes as possible, and this definitely meets the criteria!
To make the peppered rib eye sliders, you start by making the red onion jam. You’ll saute olive oil with onions and garlic, then add in red wine and balsamic vinegar.
Reduce it until it becomes a jam-like consistency, then squeeze in a bit of lemon juice and add in salt and pepper. This will store in the fridge for up to a week, so you can use it for other meals (if it lasts that long!).
In the same pan, add olive oil. Season a ribeye steak with salt and a liberal sprinkling of cracked pepper. Cook on medium-high until desired doneness. Let it rest for a few minutes, then cut into thin slices.
To assemble the peppered ribeye sliders, spread red onion jam on rolls, then pile on sliced peppered ribeye. Top with desired garnishments.
Peppered Ribeye Sliders with a Red Onion Jam

Ingredients
- 4 tbsp olive oil divided
- 1 red onion diced
- 3 cloves garlic minced
- 1/4 cup red wine
- 2 tbsp balsamic vinegar
- 1/2 lemon
- 1 lb ribeye steak
- salt and pepper to taste
- 8 slider rolls
- 8 slices swiss cheese
- lettuce, onions, tomatoes optional
Instructions

Warm 2 tbsp olive oil in a large pan over medium heat. Add in sliced onions and cook until translucent, about 7 minutes. Add in garlic and saute for 30 more seconds. Add in red wine and balsamic vinegar, reduce to medium-low, and simmer until reduced to a jam-like consistency. Add in the juice from half a lemon, salt and pepper to taste, then set aside.

Heat remaining olive oil over medium-high heat. Salt and liberally pepper steak, then cook in pan until desired doneness. Let it rest for a couple minutes, then slice into thin cuts.

To assemble sliders, spread red onion jam onto rolls, top with steak, Swiss cheese, and desired garnishments. Enjoy!
