Works with Fresh Eggs
I have had chickens for about a year and a half now, and one of the things I didn’t expect when eating fresh eggs is what a pain they are to peel. It’s as if the egg white is super-glued to the shell!
When you make hard boiled eggs in the instant pot, with the right technique, your eggs will peel much easier! Use the same recipe as above, just make sure your eggs are at room temperature before placing them in the Instant Pot.
Why are Fresh Eggs a Pain to Peel?
In fresh eggs, the egg whites stick to the shell membrane because it’s a less acidic environment when the egg is fresh. When the protective coat on the eggshell deteriorates, the egg becomes more porous and absorbs more air. This increases acidity in the egg, which makes the eggshell less sticky.
I read that the eggs in the grocery store are often 4 – 8 weeks old by the time a consumer buys them. So, it makes sense that they’re easier to peel given their age.
