Can’t decide if you want brownies or cookies? You can have both with these homemade brownie cookies!

Brownie Cookies

I am not the hugest sweets eater.  I generally prefer salty over sweet, and wine over cookies 🙂  But, there is one time where all my norms fly out the window, and I find myself craving sweets, and that is during pregnancy.  

When I am pregnant, I start craving cookies, cake, pies, ice cream, candy… and anything else sweet I can get my swollen fingers on.

So the other day, I had a craving for brownies and cookies, and decided I was going to make a batch of brownie cookies.  I searched for a brownie cookies recipe, so I had a starting point, and adapted from there.  

Most of the recipes call for a box of brownie mix, and I know that brownie mix can be easily replicated from scratch at home.

And, they turned out beautifully.  They are quite possibly the best cookie I have ever had, but they are certainly the best cookie I have ever made.  If you like brownies, or sweets, or find yourself craving everything while you’re 7 months pregnant, you have got to make these.

Brownie Cookies

  • 1/2 cup butter
  • 1 cup organic sugar cane (or sugar)
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup unbleached flour 
  • 2 tbsp cocoa powder
  • 1/2 tsp salt 
  • 1/2 tsp baking powder
  • 1 cup white chocolate chips

Preheat oven to 350 degrees. 

In a medium bowl, cream together butter and sugar with an electric mixer.  Add in eggs and mix until incorporated.  Add in vanilla extract and mix another 30 seconds. 

In a separate bowl, combine flour, cocoa powder, salt and baking powder. 

Slowly add dry ingredients to the wet ingredients, 1/2 cup at a time, mixing well after each addition.  Once the ingredients are incorporated, fold in white chocolate chips.* 

Drop by rounded tablespoon onto a greased baking sheet, and bake in preheated oven for 10 – 15 minutes.  

*This is a looser batter, so you may want to pop the dough in the freezer for 20 minutes or so, prior to baking.  I have found the cookies hold their shape better if you take this step.

Ingredients

  • 1/2 cup butter

  • 2 tbsp cocoa powder
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350 degrees.

  2. In a medium bowl, cream together butter and sugar with an electric mixer. Add in eggs and mix until incorporated. Add in vanilla extract and mix another 30 seconds.
